Alot of our customers have been asking for the recipe for our brown bread, I even had a lady from Canada emailing me, whose brother had brought it over. I was slow to give it out because we use big commercial ovens and make up to two dozen at a time and it just did not taste the same when you divide the recipe down and cook it in a small oven. But after much experimenting at home in my own kitchen I think I have come up with a brown bread that tastes just like what we make at Niamh's Ingredients
Preheat the oven to Gas Mark 6, 200°C (400°F).
Mix the flour, bread soda and salt together in a bowl. Combine the egg with the buttermilk and honey then mix into the flour. Add a little more buttermilk if the mixture is dry – it should be a soft dough. Then pour the lot into a lightly oiled loaf tin. Sprinkle the sesame seeds or porridge oats over the top of the loaf if using.
Bake for 45-50 minutes. To know when it is cooked simply tap the bottom of the loaf – it will sound hollow when it is fully cooked. Remove from the tin and wrap in a clean tea towel while cooling. This will keep the crust soft
We do a triple seed loaf that has proved very popular, so for this just add a small fistful each of pumpkin, sesame and sunflower seed. To make it look nice sprinkle some of the seeds on top before baking.
Eat this hot out of the oven with loads of real butter ( none of that horrible spreadable stuff) and a big dollop of homemade jam.....
Christmas is my favourite time of year, although it can get hectic, I love the buzz, especially in the Restaurant. To herald that time of year, we have introduced our winter warmer drinks.
